Further processed and ready to eat poultry products are increasing in popularity. Many consumers desire poultry products that combine convenience with innovation. 

Michigan Meat Association (MMA) and Michigan State University Extension are partnering for the Poultry Product Processing workshop on Friday, March 6, 2015. This workshop will provide new and alternative ways to make further processed poultry products and improve processing parameters. Meat and poultry processors interested in adding more poultry options to their product line should consider attending the workshop. The workshop will be held at the Michigan State University Meat Lab in Anthony Hall, East Lansing. Speakers will include individuals with extensive industry experience and faculty from Michigan State University. Registration for the workshop is through the Michigan Meat Association. Other educational topics for the workshop include animal welfare, harvesting and initial processing, selecting poultry and non-meat ingredients, smokehouse schedules, packaging with roll stock machines, and assessing product shelf life. Although the topics will focus on poultry products, the information learned will be applicable to other meat products. For example, roll stock machines have numerous applications for improving product quality, providing labor savings, and extending fresh and frozen product shelf life. 

The Poultry Product Processing workshop is a lead-in to Michigan Meat Association’s Annual Convention on March 7, 2015. The MMA Annual Convention will be held at the Crown Plaza in Lansing and include a technical and regulatory session, trade show and processed meat and poultry product contest. Both the pre-convention workshop and MMA Annual Convention prove to be a valuable networking opportunity for meat and poultry processors across Michigan.
